Enjoy ginger tea any time your stomach is upset or when you are experiencing sore joints. If you’re in a rush, you can use a tea bag, but it’s always a good idea to stock your fridge (or freezer) with fresh ginger. In herbal medicine, ginger promotes the elimination of digestive stress as well as relaxing and soothing the throat. Both the lemon and the ginger are rich sources of antioxidants that inhibit inflammation.
First, make a strong ginger decoction:
1/4 cup minced ginger root
4 cups filtered water
Finely chop ginger and steep with freshly boiled water for at least 20 minutes. Consider steeping it overnight—a long infusion maximizes the transfer of the active ingredients into the liquid.
To make the popsicles:
3 1/2 cups strong ginger tea
4 tbsp organic lemon juice
3 tbsp honey or 40 drops of liquid stevia
Combine tea, lemon juice and stevia or honey and stir. Place into popsicle makers and freeze for at least 2 hours.
Makes 6 to 8 pops.
