Looking for a healthy pasta alternative? Try zucchini noodles! You can turn a whole zucchini into pasta with a vegetable spiralizer.
Vegetable spiralizers are fun and easy to use. (Click here for more info.) Just pop an uncut zucchini into the spiralizer and turn the crank to create oodles of noodles. Then toss with pesto recipe below and some fresh tomatoes. Slimming, fresh and tasty.
Pesto Recipe
Ingredients:
2 cups fresh basil
1/2 cup hemp hearts
1/2 cup olive oil
3-4 tbsp lemon juice
3 cloves garlic
½ to 1 tsp pink rock or grey sea salt
Optional:
roast chicken, diced
tomatoes, sliced in half
Directions:
1. Put all pesto ingredients in a food processor.
2. Blend on high until smooth. Makes 1.5 cups of pesto. Pour extra into small glass jars to store in the fridge. This pesto freezes well so feel free to double this recipe!
3. Pour lots of pesto (depending on how saucy you like it) over the zucchini noodles and toss with sliced tomatoes and roast chicken if desired.
